You may remember our June Single Origin El Salvador Monte Sion Honey, which featured tasting notes of: Chocolate, Weetbix, roasted almonds, yellow peach, and a long panela sugar finish.
While both come from the same origin, the processing methods create very distinct flavour profiles:
– Honey Process (June) A more rounded, comforting profile, highlighting chocolatey sweetness, cereal and almond notes, balanced with soft fruit like yellow peach and lingering panela sugar.
– Natural Process (August) More fruit-forward and aromatic, with brighter acidity, tropical fruit and floral elements, and a longer, more expressive finish.
